Because it's flat and thin, it stays crispier than almost any other savory.
We make ours with a blend of Gram Flour (Besan) and Rice Flour for the
perfect "Golden Ratio" of crunch. Seasoned with a kick of Red Chili
Powder and a hint of Asafoetida (Hing), it cuts through the sweetness of
your evening tea perfectly.
